Ingredients:
2 slices of bread
2 eggs
2 tbsp milk (for fluffiness)
1 small onion (finely chopped)
1 small tomato (finely chopped)
1–2 tbsp chopped coriander (dhania)
1 green chili (optional, chopped)
Salt to taste
Black pepper to taste
1–2 tbsp oil

Steps:
Prepare the egg mixture:
* Crack eggs into a bowl.
* Add milk (optional), salt and pepper.
* Beat well.
Add veggies:
* Mix in chopped onion, tomato, coriander and chili.
Heat the pan:
* Add oil to a pan over medium heat.
Cook the omelette:
* Pour the egg mixture into the pan and spread evenly.
Add bread slices:
* Place the bread slices on top of the semi-cooked omelette.
* Press gently so they stick.
Flip it carefully:
* Once the bottom is cooked, flip the whole thing so the bread side touches the pan.
Toast the bread:
* Cook until the bread is golden and crispy.
Fold and serve:
* Fold in half or make a sandwich style.
* Serve hot with tea or coffee.
Tips:
* Use slightly stale bread for better texture.
* Cook on medium heat to avoid burning.
* Add a little butter at the end for extra flavor.
