  • 2 tbsp πŸ₯œ cashew nuts + 2 tbsp πŸ‡ raisins – the nuts + golden bits
  • 3Β½ cups πŸ’§ hot water + 1 tsp πŸ§‚ salt + Β½ tsp 🍚 sugar
  • 2 tbsp 🌿 spring onion greens, chopped for garnish

Method:

  1. Fry nuts: Hot 🧈 ghee, fry πŸ₯œ cashews till golden. Add πŸ‡ raisins 10 sec till puffed. Remove, set aside.
  2. Whole spices: Same ghee, add 🌿 bay leaf + cloves + cardamom + cinnamon. Sizzle 30 sec.
  3. Base: Add πŸ§… onion, fry till light golden. Add πŸ§„ ginger-garlic paste, 1 min.
  4. Veggies: Add πŸ₯• carrot + πŸ«› peas + 🌿 beans. Stir-fry 2 mins. Don’t overcook – keep bright.
  5. Rice: Add drained 🍚 rice, gently sautΓ© 2 mins to coat. Pour πŸ’§ hot water + πŸ§‚ salt + 🍚 sugar. Boil, then cover + lowest heat 12 mins. No stirring.
